Aging in the Cellar: 5-10 years
Accompanies a variety of flavours such as poultry and white meat stewed with vegetables and herbs in white egg-lemon sauce, roasted lamp and pork with spices, soufflés or tarts with matured and smoked cheese, pasta carbonara, Asian dishes with pork and chicken, and fried rice with egg , vegetables and white meat
The grapes are hand-picked and placed in small crates. After the harvest, the grapes are taken immediately into the winery. Cooling the grapes at 8 °C, destemming and pre-fermentation maceration for 6 hours at 10 °C. Static settling and fermentation at controlled temperature (16 °C) in small stainless steel tanks. After fermentation the wine is left on the lees for 9 months with frequent stirring , bottled and cellared for 3 more years.
